As much as I don’t like the colder weather, I really do enjoy the soup options there are now that it’s fall. The crockpot is my favorite kitchen appliance because I just throw it all in and walk away.
My goal in life is to have my kids eat without complaining and I think I got that with this recipe. My kids ate their dinner all gone. Hallelujah!
This kid-friendly creamy Mexican soup is so comforting and delicious. It is perfectly paired with my rice or some tortilla chips on the side. My kids opted for the chips, of course.
This creamy chicken Mexican soup is super heavy and warms the belly. It would actually be the perfect ketogenic soup because of the high-fat content and super low carb.
This was one of the first soups of the season that I’ve made and I am quite proud of it because it is awesome1 I hope you enjoy it as much as we did.
Here is your Kid-Friendly Creamy Mexican Soup.
Kid-Friendly Creamy Chicken Mexican Soup
This is the best warm and creamy soup for the Fall that the entire family will love!
- 2 LB Chicken tenders Get the one without the breading
- 1 Small Onion Finely diced
- 1 TBSP Garlic Finely diced
- 1 Red bell pepper Finely diced
- 1 15 oz can Fire roasted tomatoes Diced
- 1 tsp Dried oregano
- 1 tsp Chili powder
- 1 tsp Paprika
- 1.5 Cup Chicken broth
- 1/2 Cup Heavy cream
- 4 oz Cream cheese
- 1/2 Cup Shredded cheddar cheese
Warm up a pan with some oil and add your diced onions, garlic, and bell pepper. Saute until it is soft. Add a pinch of salt and pepper to the veggies.
I use purple onion because I had that in the fridge already. Also, I really like them. I know I said purple onion but it is what it is. It's not red!
Place all the sauteed veggies into the crockpot.
Next, dump all the chicken over the veggies in the crockpot. Yes, I used frozen chicken and some frown upon this but I've been doing this for over 13 years and we never got sick so I'll keep doing it. It is so much easier and I don't need to handle raw, slimy chicken!
Dump the can of fire roasted tomatoes and all the spices over the chicken.
Pour the chicken broth over everything and cover your crockpot. I cooked mine for 4 hours on low but I know how hot my crockpot gets so I never need to worry about undercooked chicken.
If you know your crockpot takes longer to cook then adjust the time accordingly. Just make sure the chicken is fully cooked. ok?
After the chicken is cooked, shred it all up with two forks. Add in the cream, cream cheese, and shredded cheddar cheese. Cover and let it cook for another 30 minutes.
Before eating, stir everything up to make sure the cheese is mixed in well. Enjoy!
Seriously, this kid-friendly creamy chicken Mexican soup! It was so good, the whole family loved it! The kids ate, the husband ate, all was well. If you love creamy, cheesy soups then this one is definitely for you.
It is so easy to make; the only prep is chopping the veggies and sauteeing but if you really don’t feel like doing that part; just stick the diced veggies into the crockpot. I’m telling you though, the sauteeing enhances the flavors of this meal so just do it!
