The last few weeks have been pretty awesome! We have been on vacation to see family in Missouri. While being there, I really didn’t follow my diet all that well so now that we’re back, I am getting back on track. My husband is now on the healthy kick with me so I’m always looking for foods he will like and eat. I also need to think about what my kids will eat. My middle child is pretty picky and he drives me nuts so I need to make sure he will eat what I cook.
Since I am a pre-diabetic, I have decided to cut all grains from my food list. Grains for a diabetic person is pretty much poison because the effect it has on blood sugar. I really don’t want to develop Type 2 diabetes so I have been cutting grains to help with prevention.
To be honest, I thought cutting out grains would be harder but it hasn’t been bad for me. I don’t even miss it! We have found some alternatives to things that have helped if we ever do have cravings for things. Basically, almond flour is good! We recently made almond flour waffles which were super delicious! I did try a coconut flour pancake but that was not my favorite thing! I am pretty sure I won’t be eating those again.
I have found some things that I can make into a healthier option and that my kids will still eat! Last night I made Grain Free, Kid-Friendly Chicken Parmesan. I like to call it “Chicky Chicky-Parm Parm” while I do a little jiggy in the kitchen. My kids thought I lost my mind. 🤷♂️
Seriously though, this dinner was super yummy and my kids loved it! My husband and I paired our chicken with veggies and I made some rice pilaf for my kids to eat with theirs. Here is my recipe for the most delicious and east Rice Pilaf!
Grain Free, Kid-Friendly Chicken Parmesan
This meal is super delicious and your kids will love it! It is also a healthier option to the traditional chicken parmesan so you won't need to feel guilty eating it!
- 2 Pounds Chicken Breasts or Tenderloin Thawed out
- 2 tsp Paprika
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 TBSP Olive Oil
- 1 Half Purple Onion Diced
- 2 Cloves Garlic Diced
- 28 oz Crushed Tomato
- 1 TBSP Dried Basil
- 1 TBSP Perfect pinch, roasted garlic and bell pepper If you cant find this then skip it. You can add 2 tsp of dried oregano instead.
- 1 Cup Mixed Blend Shredded Cheese Choose any cheese you like. I used a cheddar/jack blend.
- 1 Half Cup Shredded Parmesan Cheese
- 1 Pinch Red Pepper Flakes
Place the olive oil in a skillet and heat it up to medium-high. Season both sides of the chicken with salt, pepper, and paprika. Brown both sides of the chicken, about 3 minutes per side then place them in a 13x9 pyrex.
In the same skillet you used to brown the chicken, add the diced onion and garlic with a drizzle of olive oil. Cook until the onion is translucent.
Add the whole can of crushed tomato to the pan and stir it in with the onion and garlic.
Add in salt and pepper to taste along with the red pepper, and the perfect pinch. Simmer for about 10 minutes then pour the sauce over the chicken which is in the pyrex. Spread the sauce evenly over the chicken and sprinkle the parmesan cheese and the mixed cheese blend over the top. Place it in a 365-degree oven for 30 minutes until the cheese is all melted.
There it is! Not a difficult recipe and so delicious! My kids loved this meal and so did my husband. This is a yummy and hearty dinner that you will surely make time and time again! I really hope you enjoy it!
