Summertime is here and I am so excited about it! The warm weather, BBQ’s, pool time, sleeping in, and vacations! I’m not really going on lots of vacations, just one but still!

During the Summer, I don’t feel as hungry as I do during the fall or winter. I eat lots and lots of watermelon and salads. What is the most famous salad you see at BBQ’s? It’s definitely potato salad for me. I love potato salad!! I love anything that has to do with a potato, to be honest. The only problem is, potato salad is made with mayo and it doesn’t hold well outside in the heat so the alternative salad that I make is this Easy Summer Bean Salad. There is no mayo at all so it will be alright out in the heat for a Summer BBQ!

This salad is pretty good for you too! It has lots of protein, healthy fats and veggies to keep you well balanced. Also, it tastes fabulous so you’ll make it again and again!

The prep work for this Easy Summer Bean Salad is very minimal! Mostly, you’ll just be opening up some cans and throwing the stuff in a bowl! I hope you enjoy this recipe!!

Easy Summer Bean Salad

The easiest summer bean salad that will please any palette.

Ingredients

  • 1 Can Black Beans Make sure you drain and rinse these well.
  • 1 Can Corn Drained
  • 1 Can Black Eyed Peas Drained
  • 1 Bunch Cilantro Chopped
  • 1 Half Purple Onion Diced very fine
  • 5 Tomatoes Diced very fine
  • 1/4 Cup White Wine Vinegar
  • 1/4 Cup Olive Oil
  • 1.5 TSP Salt
  • 1.5 TSP Pepper
  • 1.5 TSP Sugar This helps cut the acid
  • 2 Avocados Cut into chunks
  • 1 Whole Red Bell Pepper Diced fine
  • 1 Whole Green Bell Pepper Diced Fine

Instructions

  1. Add all the ingredients into a bowl and stir. Let it sit in the fridge for about an hour so the flavors can meld well.

    If you're not a big fan of white wine vinegar then use fresh lemon juice in its place. Also, opt out of using the sugar if you go with the lemon juice option.

    Both options are great. It really just depends on your taste!
